  • 2 cups mozzarella cheese (shredded)

  • 3 ounces cream cheese

For the Filling:

  • 1/2 cup melted butter

  • 1 tablespoon ground cinnamon

  • 1/4 cup sugar-free sweetener

For the Frosting:

  • 4 ounces cream cheese (softened)

  • 2 tablespoons butter (softened)

  • 1/2 cup powdered keto-friendly sweetener

  • 1/2 teaspoon vanilla extract

  • 12 tablespoons heavy cream (optional, for consistency)


Instructions

  1. Prepare the Dough:

    • Preheat oven to 375°F (190°C).

    • In a microwave-safe bowl, melt mozzarella and cream cheese together (about 1–2 minutes). Stir until smooth.

    • In a large mixing bowl, combine almond flour, protein powder, sweetener, baking powder, xanthan gum, and salt.

    • Add melted cheese mixture to the dry ingredients and mix until a dough forms. If sticky, chill for 15–20 minutes.

  2. Roll Out the Dough:

    • Place dough between two sheets of parchment paper.

    • Roll out to a 10×12-inch rectangle (about 1/2 inch thick).

  3. Prepare the Filling:

    • Brush melted butter over the surface of the dough.

    • Sprinkle cinnamon and sugar-free sweetener evenly over the buttered dough.

  4. Roll and Slice:

    • Starting from the long edge, roll the dough tightly into a log.

    • Slice into 8–12 even pieces using a sharp knife.

  5. Bake:
