Ingredients

2 cups almond flour

2 cups mozzarella cheese (shredded)
3 ounces cream cheese
For the Filling:
1/2 cup melted butter
1 tablespoon ground cinnamon
1/4 cup sugar-free sweetener
For the Frosting:
4 ounces cream cheese (softened)
2 tablespoons butter (softened)
1/2 cup powdered keto-friendly sweetener
1/2 teaspoon vanilla extract
1–2 tablespoons heavy cream (optional, for consistency)
Instructions
Prepare the Dough:
Preheat oven to 375°F (190°C).
In a microwave-safe bowl, melt mozzarella and cream cheese together (about 1–2 minutes). Stir until smooth.
In a large mixing bowl, combine almond flour, protein powder, sweetener, baking powder, xanthan gum, and salt.
Add melted cheese mixture to the dry ingredients and mix until a dough forms. If sticky, chill for 15–20 minutes.
Roll Out the Dough:
Place dough between two sheets of parchment paper.
Roll out to a 10×12-inch rectangle (about 1/2 inch thick).
Prepare the Filling:
Brush melted butter over the surface of the dough.
Sprinkle cinnamon and sugar-free sweetener evenly over the buttered dough.
Roll and Slice:
Starting from the long edge, roll the dough tightly into a log.
Slice into 8–12 even pieces using a sharp knife.
Bake:
Arrange rolls in a 9×13-inch baking dish lined with parchment paper.
Bake for 22–25 minutes until golden brown.
Let cool for 5 minutes before frosting.
Make the Frosting:
Beat cream cheese and butter until smooth.
Add powdered sweetener and vanilla extract. Mix until creamy.
